May was quite the month over here! We went on a road trip to visit family, had some big changes work-wise, and then had family in town to finish out the month. It was busy to say the least, but it was nice getting to see everyone! And, now that June’s almost here, we are looking forward to having an empty schedule for the next couple weeks just to relax and regroup a bit.
How was the month of May for you? Hope you’re gearing up for summer and enjoying the warmer weather, or at least some mild weather before the heat really kicks in.
I put together a couple of my favorite things (that I actually purchased or tried this month) in case you’re looking for something new or something to cook in the coming weeks. Hope you had a great month!

Beyond Yoga Spacedye 7-Inch Bike Shorts in Darkest Night
I’m a big fan of workout leggings (who isn’t?), but when it starts getting hot out, I always wish I had another option. So, I decided to switch it up and try out the Beyond Yoga bike shorts, and I am sold! I’ve worn them with over-sized t-shirts and tennis shoes to run errands, I’ve worn them on walks and to the gym. They’re the perfect alternative in the summer heat and I am officially on the bike short bandwagon now.
Dr. Bronner’s Organic Lip Balm – Variety Pack
I’ve been looking for a new organic lip balm lately, and wanted something with just a few ingredients that didn’t have any “fragrance” or crazy additives, and decided to try this variety pack from Dr. Bronner’s. I’ve been using it for a couple weeks now and I have to say, so far I really like it! I also have sensitive skin, and my lips usually react to lip balms within a couple days if it’s not a fit, and so far we’re still in the clear. So, if you’re looking for an organic lip balm, this might be worth a try!

Buttermilk Pancakes
The pancake recipe I’d been using for years was decent, but not great. So one morning I decided to switch it up and make buttermilk pancakes and they have officially replaced my old recipe!
It’s pretty much the same process as regular pancakes, you just use buttermilk in place of regular milk, and the recipe recommends stirring the batter with a wooden spoon. But don’t worry if that seems daunting, the recipe includes a great tutorial video to guide you through each step!
Slow Cooker French Dip Sandwiches
I don’t think I’ve had a french dip sandwich before, but when I saw this recipe on Pinterest and saw that I could put everything in the slow cooker, I decided to give it a try!
It was super easy to make, tasted great, and we had enough for leftovers! We also used some of the leftover meat for breakfast the next day and did our own version of a short rib hash, and served it with eggs and breakfast potatoes. It was a definite winner!
Alright, that wraps up this month’s post! Hope everyone had a great May and cheers to the month ahead!
